Gluten Free Cookies
These cookies are to die for not only because they are delicious but also because they are mega healthy, gluten-free, and dairy-free. They also take max 20 minutes from start to finish, and they are guilt-free. I also love that they are super high in protein. You're on a ride to become a cookie monster like me!
Ingredients:
1 can chickpeas (drained and rinsed)
½ cup unsalted almond or peanut butter ( I do half and half)
⅓ cup brown rice flour
⅓ cup maple syrup
2 teaspoons vanilla extract
¼ teaspoon cinnamon
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
⅔ cup chocolate chips
Instructions:
Preheat your oven to 350°F (175°C).
In a food processor or blender, blend the chickpeas, almond/peanut butter, maple syrup, and vanilla extract until smooth.
Add in the brown rice flour, cinnamon, baking powder, baking soda, and salt. Blend again until everything is well combined.
Stir in the chocolate chips or garnish on top.
Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper.
Bake for 13 minutes, or until the cookies are golden on the edges.
Let cool for a few minutes, then enjoy your guilt-free, protein-packed cookies!
