Herbal Coconut Dressing

Ingredients:

  • 1 cup coconut cream

  • 1 cup fresh parsley or cilantro

  • 1 cup mixed soft leafy herbs, dill, mint and tarragon

  • 2 tablespoons chopped chives

  • 2 tablespoons fresh lemon juice, plus ½ teaspoon zest

  • 1 tablespoon extra-virgin olive oil

  • 2 teaspoons capers

  • 1 garlic clove

  • ¼ teaspoon sea salt

Instructions:

  1. Prepare the ingredients: Roughly chop the parsley (or cilantro), soft leafy herbs (dill, mint, tarragon), and chives. Mince the garlic clove.

  2. Blend: In a blender or food processor, combine the coconut cream, fresh herbs, chives, garlic, capers, lemon juice, lemon zest, olive oil, and sea salt.

  3. Blend until smooth: Blend the mixture on high speed until smooth and creamy, scraping down the sides as needed. If the dressing is too thick, you can add a tablespoon of water or lemon juice to thin it out to your desired consistency.

  4. Taste and adjust: Taste the dressing and adjust the seasoning as necessary. You may want to add more lemon juice for extra brightness, more salt, or additional herbs depending on your flavor preference.

  5. Serve or store: Transfer the dressing to a jar or airtight container. You can use it immediately or store it in the fridge for up to a week.
